Preparation

Step 1 Preheat the oven to 180°C top and bottom heat.

Step 2 Cut olives, dried tomatoes and smoked tofu into small pieces.

Step 3 In a mixing bowl, mix the flour with baking powder and baking soda. Add the salt and pepper and dried herbs.

Step 4 Add the almond drink, sparkling water and olive oil and mix with a whisk or a hand mixer.

Step 5 Add apple cider vinegar and stir briefly.

Step 6 Carefully fold the olives, dried tomatoes and smoked tofu into the dough.

Step 7 Line a muffin tin with 12 paper cases and spread the dough evenly on top.

Step 8 Bake in the oven for about 25 minutes.

110 g Black, pitted olives

80 g Dried tomatoes

90 g Smoked tofu

200 g Flour (whole grain or type 1050)

1 tsp Baking powder (5 g)

1 tsp Baking soda (5 g)

1/2 tsp Salt (3 g)

Pinch of Pepper

Some Dried herbs

150 ml Unsweetened almond drink

100 ml Sparkling water

60 g Olive oil

1 tbsp Apple cider vinegar (15 ml)
