Preparation

Step 1 Dice the vegetable onions, carrots, peppers and smoked tofu, cut the pointed cabbage into strips and finely chop the garlic.

Step 2 Heat rapeseed oil in a large pot, add onions to the pot and fry, then add pointed cabbage, carrots, peppers, smoked tofu, curry paste and garlic in turn.

Step 3 Deglaze with soy sauce, add water and simmer on a low level for 15 minutes.

Step 4 Season the soup with salt and pepper.

Step 5 Cook flat rice noodles according to package instructions.

Step 6 Divide flat rice noodles into 2 bowls and pour vegetable soup over them. Optionally garnish with coriander.

150 g smoked tofu

¼ sweetheart cabbage (300 g)

2 garlic cloves

1 tbsp rapeseed oil (15 g)

4 tsp red curry paste (20 g)

4 tsp soy sauce (20 ml)

100 g rice noodles

Some Fresh coriander (optional)
