Step 1 Cut the avocado into thin slices.
Step 2 Quarter the tomatoes, dice the cucumber and slice the radishes. Set aside along with 20 g spinach and peas.
Step 3 For the crepes, mix the flour with baking powder. Place in a stand mixer together with oat drink, sparkling water, 30 g spinach and a pinch of salt and puree into a smooth dough (alternatively use a hand blender).
Step 4 Heat 1/2 teaspoon of rapeseed oil in a coated pan and bake 1/4 of the dough on both sides. Gradually fry 4 crepes.
Step 5 Spread crepes with tahini dressing and top with avocado, tomatoes, cucumber, radishes, spinach and peas.
Step 6 Before serving, season with salt and pepper and optionally garnish with dill and a squeeze of lime juice. Fold the crepes as desired.
1 Avocado (150 g)
100 g Cherry tomatoes
100 g Cucumber
50 g Radishes
50 g Fresh spinach
50 g Fresh peas
100 g Wholemeal flour
½ tsp Baking powder
100 ml Unsweetened oat drink
60 ml Sparkling water
Pinch of Salt & Pepper
2 tsp Rapeseed oil (10 g)
20 g Tahini dressing
Some Fresh dill (optional)
Some Lime juice (optional)
