Preparation
Step 1 Cook the lentils according to the package instructions. Place the cooked lentils in a sieve, rinse and allow to cool.
Step 2 Dice peppers, tomatoes, and cucumber. Mix with the lentils in a bowl.
Step 3 Chop the coriander and add it.
Step 4 Mix lemon juice, olive oil and balsamic vinegar and pour over the salad.
Step 5 Mix everything together and season with salt and pepper.
200 g Brown lentils (dry weight)
1 Peppers (150 g)
2 Tomatoes (180 g)
1/2 Cucumber (175 g)
10 g Fresh coriander (alternatively fresh parsley)
2 tbsp Lemon juice (30 ml)
1 tbsp Olive oil (15 g)
2 tsp Balsamic vinegar (10 ml)
Pinch of Salt & Pepper
