Preparation

1. Drain the tofu and tear into small pieces with your hands.

Halve the onion and cut it into fine cubes. Put the olive oil, onion and tofu in a pan over medium heat and stir for approx. 5 minutes. Season the scrambled tofu with mixed salad herbs. Mix tofu and soy yogurt and simmer for 2 to 3 minutes.

2. Halve the avocado, remove the stone, and remove the flesh from the peel using a spoon and cut into slices. Wash and slice tomatoes. Toast the whole wheat toast as desired.

3. Place scrambled tofu on one of the sandwich slices and top with avocado and tomato. Pour the cress over it and place the second sandwich slice on top of each.

Halve the breakfast sandwich diagonally and serve.
