Preparation
1. Preheat the oven to 180 °C (top/bottom heat). Peel sweet potatoes and cut into small cubes. Mix the sweet potatoes, a little olive oil, salt, pepper and tomato paste in a bowl, place on a baking tray lined with baking paper and bake until golden brown, about 25 minutes.
2. Wash zucchini and cut off the ends. Quarter the lemon and squeeze juice. Cut the zucchini into thin slices and marinate with a little olive oil, salt and lemon juice. Wash the apple, quarter it, remove the core and seeds and cut one half into fine cubes. Wash the parsley, shake dry, pluck the leaves from the stems and chop finely.
3. Mix apple and parsley in a bowl and season with salt and pepper.
4. Wash quinoa in a sieve. Bring about 120 ml of salted water to the boil in a pot, add the quinoa and simmer covered at a low level for approx. 12 minutes. Remove the pot from the heat and let the quinoa soak for another 5 minutes.
5. Put the quinoa with apple salsa, sweet potatoes and zucchini in a bowl and serve.
