Preparation
Step 1 Cut the mushrooms into slices and dice the smoked tofu.
Step 2 Heat rapeseed oil in a pan and briefly fry the mushrooms and smoked tofu in it. Then set aside and let cool.
Step 3 Tear the rocket into bite-sized pieces and finely dice the tomatoes.
Step 4 Place the rocket and tomatoes in a bowl along with the lentils, mushrooms and smoked tofu.
Step 5 In a small glass, mix linseed oil, lemon juice, water and mustard to make a dressing.
Step 6 Pour the dressing over the salad and season with salt and pepper.
200 g mushrooms
100 g smoked tofu
1 tsp rapeseed oil (5 g)
80 g rocket
2 tomatoes (180 g)
100 g cooked red lentils
2 tsp linseed oil (10 g)
1 tbsp lemon juice (15 ml)
1 tbsp water (15 ml)
1 tsp mustard (5 g)
Pinch of Salt & Pepper
