Step 1 Heat up the oven to 190°C upper and lower heat
Step 2 Cut potatoes into pieces. Cut carrots into long pieces. Cut the onions into quarters.
Step 3 Place potatoes, carrots, onions together with tomatoes and garlic cloves in a baking dish.
Step 4 Pour olive oil over the vegetables, add dried and fresh herbs and season with salt and pepper. Stir the vegetables so that they are completely covered with oil and herbs.
Step 5 Bake in the oven for about 35 minutes until the potatoes are lightly browned.

2 carrots (200 g)
1 Red pepper (150 g)
2 Red onions (160 g)
4 Tomatoes (360 g)
4 Garlic cloves
1 tbsp Olive oil (15 g)
Some dried Italian herbs
Some fresh rosemary
Some fresh thyme
Pinch of Salt & Pepper
