Preparation
Step 1 Roughly dice the onion and sweet potato. Place in a large pot and cover with vegetable broth.
Step 2 Bring to the boil and cook for 15 minutes over medium heat until soft.
Step 3 Optionally add dried mushrooms to a strong blender and chop on high speed until a mushroom powder is formed.
Step 4 Puree the soup with a hand blender until creamy.
Step 5 Season with salt and pepper and optional mushroom powder.
Step 6 To serve, add 50 ml of coconut milk per plate to the soup and sprinkle chopped parsley over it.
1 Vegetable onion (150 g)
1 Sweet potato (300 g)
600 ml Vegetable broth
Some Dried mushrooms (optional)
Pinch of Salt & Pepper
100 ml Coconut milk
Some fresh parsley
