Step 1 Cut the cucumber into slices, quarter the tomatoes, cut the peppers into thin strips, cut the avocado into slices. Cut or slice the red cabbage very finely.
Step 2 Arrange the vegetables in 2 bowls together with the chickpeas, salad and rice and season with salt and pepper.
Step 3 Add 1 tablespoon of lime juice over each and garnish with walnuts and optional sesame seeds.
1/2 Cucumber (175 g)
2 Tomatoes (180 g)
1 Orange pepper (150 g)
1/2 Avocado (75 g)
1/4 Red cabbage (150 g)
140 g Cooked chickpeas
50 g Green leaf salad
200 g Cooked brown rice
Pinch of Salt & Pepper
2 tbsp Lime juice (30 ml)
20 g Walnuts
Some Sesame seeds (optional)
