Ingredients

Preparation

1. Put the couscous in a pot and pour 80ml boiling water over it. Cover the pot and let it steep for 10 minutes.

2. Drain the chickpeas in a sieve, rinse under cold water and let it drain.

Wash the cucumber, remove the ends, quarter it lengthways and cut into pieces.

Wash and halve tomatoes.

Halve, peel and finely dice the onion.

Wash the lemon, cut in half and squeeze out the juice. Wash the parsley, shake dry, pluck leaves from the stems and chop finely.

3. Place the couscous in a bowl and season with the olive oil, lemon juice, salt, pepper and stir together. Add the cucumber, tomatoes, onion, chickpeas, and parsley and mix it.


The salad is ready to be enjoyed!
