Preparation
Step 1 Roughly dice the carrots and onion.
Step 2 Heat rapeseed oil in a large pot and sauté the onions in it.
Step 3 Lightly grate the orange peel and add the zest to the onions. Peel the orange and cut into small pieces.
Step 4 Add carrots to the onions and cover with vegetable broth.
Step 5 Simmer for 15 minutes until the carrots are soft.
Step 6 Add the orange pieces and puree everything with a hand blender until creamy.
Step 7 Season with cardamon, salt and pepper.
350 g carrots
1 onion (80 g)
2 tsp rapeseed oil (10 g)
1 Organic orange (150 g)
700 ml Vegetable broth
Pinch of Cardamon powder
Pinch of Salt & Pepper
