Ingredients

Preparation

1. Wash bulgur thoroughly in a sieve under running water. Bring 400 ml of water with a little salt to the boil in a pot. Add bulgur and cook covered for approx. 10 minutes.

2. Remove the pot from the heat and let the bulgur swell for another 5 minutes.

3. Wash the zucchini, remove the ends, halve lengthwise and cut into slices.

Wash the bell pepper, cut it in half, remove the stalk and cut it into strips. Wash the eggplants, remove the ends and cut into small cubes. Halve the onion, peel it and cut it into strips.

4. Fry the onions and eggplants in a pan with olive oil for about 5 minutes. Add the bell peppers, zucchinis, mixed salad herbs, salt and pepper and fry for another 10 minutes. Make sure the eggplants are well done.

5. Put the bulgur on a plate and serve with fried vegetables.
