Preparation
Step 1 Cook rice according to package instructions.
Step 2 Cut broccoli into small florets. Cut the peppers into small pieces. Optionally chop ginger finely.
Step 3 Heat coconut oil in a large pan or wok and fry the ginger and broccoli in it.
Step 4 After a few minutes, add the peppers, peas and edamame.
Step 5 In a small bowl, mix soy sauce with lime juice and curry paste and add to the vegetables in the pan.
Step 6 Let the vegetables simmer for another 3-4 minutes, then stir in the cooked rice.
Step 7 Chop the spring onions and add them over the fried rice.

1/2 Broccoli (250 g)

2 tsp Coconut oil (10 g)
50 g Green peas (frozen)
100 g Peeled edamame (frozen)
3 tbsp Soy sauce (45 ml)
1 tbsp Lime juice (15 ml)
1 tsp Red curry paste (5 g)
4 Spring onions (60 g)
