Step 1 Preheat the oven to 180°C top and bottom heat.
Step 2 Place oats in a stand mixer and grind on high speed to get oat flour.
Step 3 Put 100 g dates in a small pot, cover with water and cook for 10 minutes until soft.
Step 4 Place the dates with approx. 100 ml of the cooking water in a blender and puree them into a soft date paste (alternatively, use a hand blender).
Step 5 Add oat flour and coconut oil to the date paste and mix with a fork to form a coarse, sticky dough. If the dough is too dry, add a little more date cooking water.
Step 6 Pour 2/3 of the dough into a springform pan lined with baking paper and spread thinly over the bottom and sides (approx. 1 cm edge height).
Step 7 Cut apples into small cubes and sprinkle with cinnamon. Cut the remaining dates into small pieces. Spread apples and dates on the bottom of the cake. Put the remaining dough over the top as a crumble.
Step 8 Bake in the oven for about 35 minutes until the crumble is lightly browned.
